jalapeno and cheese cornmeal muffins

My family loves cornbread and this is a twist on one of our favorites. Made it over the weekend along with some awesome chili for family and friends.

Ingredients

  • 1 cup all-purpose flour
  • 1 cup yellow cornmeal
  • 1/3 cup sugar
  • 3 teaspoons baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon onion powder
  • 1 can creamy style corn - the small one will be almost 1 cup
  • 3 tablespoons chopped jalapenos from a jar
  • 1/2 cup real mayonnaise (don't use miracle whip!)
  • 1 cup shredded mexican cheese blend or your favorite
  • 3 tablespoons canola or vegetable oil
  • 1 - egg

How To Make jalapeno and cheese cornmeal muffins

  • Step 1
    Combine the dry ingredients in a medium size bowl, make a well and add the remaining ingredients. Mix until blended. Spoon into a greased muffin pan.
  • Step 2
    Bake at 400° for 20 minutes or until a toothpick comes out clean. Cool on a wire rack. Can serve cold or warm but warm is best. Serve with your favorite Chili or Taco Soup recipe.
