My family loves cornbread and this is a twist on one of our favorites. Made it over the weekend along with some awesome chili for family and friends.

Ingredients For jalapeno and cheese cornmeal muffins

1 call-purpose flour

1 cyellow cornmeal
-
1/3 csugar
-
3 tspbaking powder
-
1 tspsalt

1/2 tsponion powder
-
1 cancreamy style corn - the small one will be almost 1 cup

3 Tbspchopped jalapenos from a jar

1/2 creal mayonnaise (don't use miracle whip!)

1 cshredded mexican cheese blend or your favorite

3 Tbspcanola or vegetable oil

1egg
How To Make jalapeno and cheese cornmeal muffins

1Combine the dry ingredients in a medium size bowl, make a well and add the remaining ingredients. Mix until blended. Spoon into a greased muffin pan.

2Bake at 400° for 20 minutes or until a toothpick comes out clean. Cool on a wire rack. Can serve cold or warm but warm is best. Serve with your favorite Chili or Taco Soup recipe.
