Ingredients
- 1 cup flour
- 1/2 teaspoon salt
- 1 egg, slightly beaten
- 1 cup yellow corn meal
- 1 can 12-oz. can mexi-corn, drained
- 4 teaspoons baking powder
- 1 cup milk
- 1/3 cup butter, melted
- 1/3 cup honey
How To Make honey corn muffins

Step 1Preheat oven to 400 degrees F. Combine all dry ingredients well; then add drained corn and toss lightly.

Step 2Blend together milk, butter, honey and egg. Add mixture to dry ingredients and mix just until moistened.

Step 3Prepare a muffin tin and spoon in mixture - fill 2/3 full. Bake muffins for 20-25 minutes or until toothpick, inserted into the middle, comes out clean.
