These make great appetizers or a light lunch. You can substitute turkey or chicken for the ham, if you'd like.

Ingredients For ham and cheese muffins

  • 2-1/2 c
    heart-healthy bisquick mix
  • 3/4 c
    light cream
  • 3 Tbsp
    canola oil
  • 1 lg
    egg, lightly beaten
  • 3/4 c
    cooked, diced ham
  • 3/4 c
    reduced-fat, shredded cheddar cheese

How To Make ham and cheese muffins

    Heat oven to 400. Spray 12 muffin cups w/ cooking spray, to prevent sticking. Pour bisquick mix into lg bowl. Make a well in center of mix.

    In another bowl, combine light cream and remaining ingredients. Pour into well of bisquick mix. Stir until just moistened. Spoon into muffin cups, 2/3 full. Bake 12 mins, or until golden.
