green chiles and whole corn muffins

These are wonderful and are light and very flavorful. Upon biting into one, you might even get a whole corn kernel and that is a good thing as they are so juicy and delicious! These muffins are really worth making. They are not spicy for those people who can't eat spicy foods, like me. I used Ortega Diced Green Chiles in a 7 oz can. Perfect!! ...and who can resist the cheese that is added!

Ingredients For green chiles and whole corn muffins

  • 2 pkg
    jiffy corn muffin mix
  • 2
    eggs, beaten
  • 2/3 c
    milk
  • 1 can
    whole corn, drained
  • 1 sm
    can chilies, (7oz) diced or chopped (i used diced)
  • 1 sm
    onion, finely chopped
  • 8 oz
    cheddar cheese, grated (i used bag)

How To Make green chiles and whole corn muffins

  • 1
    Mix Jiffy Muffin Mix together with eggs and milk.

    Add remaining ingredients and stir.
  • 3
    Spoon into greased muffin tins or even in a jelly roll pan or whatever you decide you would like to bake the batter in.
