green chiles and whole corn muffins
These are wonderful and are light and very flavorful. Upon biting into one, you might even get a whole corn kernel and that is a good thing as they are so juicy and delicious! These muffins are really worth making. They are not spicy for those people who can't eat spicy foods, like me. I used Ortega Diced Green Chiles in a 7 oz can. Perfect!! ...and who can resist the cheese that is added!

Ingredients
- 2 packages jiffy corn muffin mix
- 2 - eggs, beaten
- 2/3 cup milk
- 1 can whole corn, drained
- 1 small can chilies, (7oz) diced or chopped (i used diced)
- 1 small onion, finely chopped
- 8 ounces cheddar cheese, grated (i used bag)
How To Make green chiles and whole corn muffins

Step 1Mix Jiffy Muffin Mix together with eggs and milk.

Step 2Add remaining ingredients and stir.

Step 3Spoon into greased muffin tins or even in a jelly roll pan or whatever you decide you would like to bake the batter in.
