These are wonderful and are light and very flavorful. Upon biting into one, you might even get a whole corn kernel and that is a good thing as they are so juicy and delicious! These muffins are really worth making. They are not spicy for those people who can't eat spicy foods, like me. I used Ortega Diced Green Chiles in a 7 oz can. Perfect!! ...and who can resist the cheese that is added!

Ingredients

2 pkg
jiffy corn muffin mix
2
eggs, beaten
2/3 c
milk
1 can(s)
whole corn, drained
1 small
can chilies, (7oz) diced or chopped (i used diced)
1 small
onion, finely chopped
8 oz
cheddar cheese, grated (i used bag)

How to Make Green Chiles and Whole Corn Muffins

Step-by-Step

  • 1Mix Jiffy Muffin Mix together with eggs and milk.
  • 2Add remaining ingredients and stir.
  • 3Spoon into greased muffin tins or even in a jelly roll pan or whatever you decide you would like to bake the batter in.
  • 4These are excellent!
