Ingredients

  • 1
    egg
  • 1/2 c
    brown sugar, packed
  • 1/3 c
    shortening
  • 1 c
    buttermilk
  • 1 1/2 c
    granola, any flavor, slightly crushed
  • 1 1/4 c
    all purpose flour
  • 1 tsp
    salt
  • 1 tsp
    baking powder
  • 1/2 tsp
    baking soda

How to Make Granola Buttermilk Muffins

Step-by-Step

  1. Heat oven to 400.
  2. Grease bottoms of 12 medium muffin cups, 2 1/2x1 1/4".
  3. Beat in brown sugar, shortening and buttermilk thoroughly.
  4. Stir in remaining ingredients just until flour is moistened (batter will be lumpy).
  5. Fill muffin cups 3/4 full.
  6. Bake until light brown, 20-25 minutes.
  7. Immediately remove from pan; serve warm.
  8. Makes 12 muffins.
