- 2 cups self rising flour
- 1 tablespoon baking powder
- 1/2 cup shredded cheddar cheese
- 1/4 teaspoon salt
- 1 tablespoon sugar
- 1 tablespoon bacon drippings
- 1 cup milk
- 6 slices bacon, cooked crisp and crumbled
- 2 - eggs, beaten

Step 1Preheat the oven to 400 degrees. Lightly grease a 12 cup muffin pan and heat in the oven while you are mixing the recipe up.

Step 2Sift all dry ingredients together. Add wet ingredients. Fold in bacon and cheese last.

Step 3Spoon into muffin cups that have been heated. Bake for 15 to 20 mins until golden brown. Coll on cooling rack.

Step 4Sweet Onion Butter - 1 stick of unsalted butter 1/4 cup finely grated sweet onion 1/2 teaspoon garlic powder Soften the butter and mix all ingredients together. This is best made the day before and stored in the refrigerate. Remove in the morning and let it soften before serving.
