Good Morning Bacon Muffins with Sweet Onion Butter

This is a delicious and easy to make recipe. You can make these the night before if you like. Great served with scrambled eggs or an omelet for breakfast or on a breakfast buffet for brunch. They will come back for seconds.

  • 2 c
    self rising flour
  • 1 Tbsp
    baking powder
  • 1/2 c
    shredded cheddar cheese
  • 1/4 tsp
  • 1 Tbsp
  • 1 Tbsp
    bacon drippings
  • 1 c
  • 6 slice
    bacon, cooked crisp and crumbled
  • 2
    eggs, beaten

How to Make Good Morning Bacon Muffins with Sweet Onion Butter


  1. Preheat the oven to 400 degrees. Lightly grease a 12 cup muffin pan and heat in the oven while you are mixing the recipe up.
  2. Sift all dry ingredients together. Add wet ingredients. Fold in bacon and cheese last.
  3. Spoon into muffin cups that have been heated. Bake for 15 to 20 mins until golden brown. Coll on cooling rack.
  4. Sweet Onion Butter -

    1 stick of unsalted butter
    1/4 cup finely grated sweet onion
    1/2 teaspoon garlic powder

    Soften the butter and mix all ingredients together. This is best made the day before and stored in the refrigerate. Remove in the morning and let it soften before serving.
