Ingredients
- 3/4 cup butter
- 1 cup sugar
- 1 cup molasses
- 3 - eggs
- 1 cup buttermilk
- 3 cups flour
- 2 teaspoons ginger
- 1/2 teaspoon salt
- 2 teaspoons baking soda
- 2 teaspoons baking powder
How To Make ginger muffins

Step 1Heat the oven to 350°F Grease a 12 hole muffin tin.

Step 2Sift the flour, sugar, baking powder, soda and spices (ginger, salt) into a mixing bowl. Beat together the eggs, molasses, milk and butter until smooth. Stir into the dry ingredients.

Step 3Divide between the muffin tins and bake for 20-25 minutes until golden and a skewer inserted into the center comes out clean.

Step 4Leave in the tins for 10 minutes then place on a wire rack to cool. Sift a little confectioners’ (icing) sugar over the muffins just before serving.
