Ingredients

3/4 c
butter
1 c
sugar
1 c
molasses
3
eggs
1 c
buttermilk
3 c
flour
2 tsp
ginger
1/2 tsp
salt
2 tsp
baking soda
2 tsp
baking powder

How to Make Ginger Muffins

Step-by-Step

  • 1Heat the oven to 350°F

    Grease a 12 hole muffin tin.
  • 2Sift the flour, sugar, baking powder, soda and spices (ginger, salt) into a mixing bowl.

    Beat together the eggs, molasses, milk and butter until smooth.

    Stir into the dry ingredients.
  • 3Divide between the muffin tins and bake for 20-25 minutes until golden and a skewer inserted into the center comes out clean.
  • 4Leave in the tins for 10 minutes then place on a wire rack to cool.

    Sift a little confectioners’ (icing) sugar over the muffins just before serving.
