How to Make Ginger Muffins
- 1Heat the oven to 350°F
Grease a 12 hole muffin tin.
- 2Sift the flour, sugar, baking powder, soda and spices (ginger, salt) into a mixing bowl.
Beat together the eggs, molasses, milk and butter until smooth.
Stir into the dry ingredients.
- 3Divide between the muffin tins and bake for 20-25 minutes until golden and a skewer inserted into the center comes out clean.
- 4Leave in the tins for 10 minutes then place on a wire rack to cool.
Sift a little confectioners’ (icing) sugar over the muffins just before serving.
