These are savory muffins. I like to serve them with roast beef.

Ingredients

  • 1 cup all purpose flour
  • 1 cup cornmeal
  • 1 1/2 tablespoons sugar
  • 4 teaspoons baking soda
  • 1 1/2 teaspoons salt
  • 1/4 teaspoon chopped fresh thyme
  • 1/4 teaspoon chopped fresh rosemary
  • 1/4 teaspoon chopped fresh marjoram
  • 1/4 teaspoon chopped fresh sage
  • 2 - eggs, lightly beaten
  • 1 cup milk
  • 4 tablespoons (1/2 stick) melted butter
  • 4 - roasted garlic cloves, pureed

How To Make garlic herb corn muffins

  • Step 1
    Preheat oven to 425 degrees.
  • Step 2
    Sift together the first 5 ingredients together in a mixing bowl.
  • Step 3
    Mix in the herbs.
  • Step 4
    In a separate bowl, whisk together the eggs, milk, butter and garlic.
  • Step 5
    Make a well in the center of the dry ingredients; pour the eggs mixture in the well. Stir until smooth.
  • Step 6
    Fill a well buttered muffin pan two-thirds full.
  • Step 7
    Bake for 15-20 minutes or until nicely browned and baked through.
