Ingredients

  • 1 tea bag
  • 1/3 cup water
  • 1/2 cup dried apples, chopped
  • 1/2 cup dried apricots, chopped
  • 1/3 cup dried cherries, chopped
  • 1/3 cup golden raisins
  • 1/2 cup flour
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon ground ginger
  • 5 tablespoons butter, softened
  • 1/2 cup dark brown sugar
  • 2 large eggs
  • 2 tablespoons orange marmalade
  • 1/4 teaspoon almond extract
  • 2/3 cup mixed nuts, almonds, walnuts and pecans, coarsley chopped

How To Make fruit and nut bites

  • Step 1
    Make tea with boiling water.
  • Step 2
    Pour steeped tea over chopped dried fruit. Let sit for 15 minutes.
  • Step 3
    Preheat oven to 300 degrees. Line mini-muffin tin with papers.
  • Step 4
    Combine flour, cinnamon and ginger in a bowl.
  • Step 5
    Beat butter and brown sugar until fluffy.
  • Step 6
    Add eggs one at a time. Mix well.
  • Step 7
    Add marmalade and almond extract. Mix well.
  • Step 8
    Add flour, beat slowly until well combined.
  • Step 9
    Drain fruit and fold into batter.
  • Step 10
    Fold in nuts.
  • Step 11
    Fill muffins with 2 tablespoons of batter.
  • Step 12
    Bake 15 minutes. Reduce temperature to 275 degrees and rotate pan.
  • Step 13
    Bake 15-20 minutes until brown and toothpick comes out clean.
  • Step 14
    Cool in pan.
