24 Mini Muffins
Ingredients
- 1 tea bag
- 1/3 cup water
- 1/2 cup dried apples, chopped
- 1/2 cup dried apricots, chopped
- 1/3 cup dried cherries, chopped
- 1/3 cup golden raisins
- 1/2 cup flour
- 1/4 teaspoon cinnamon
- 1/4 teaspoon ground ginger
- 5 tablespoons butter, softened
- 1/2 cup dark brown sugar
- 2 large eggs
- 2 tablespoons orange marmalade
- 1/4 teaspoon almond extract
- 2/3 cup mixed nuts, almonds, walnuts and pecans, coarsley chopped
How To Make fruit and nut bites

Step 1Make tea with boiling water.

Step 2Pour steeped tea over chopped dried fruit. Let sit for 15 minutes.

Step 3Preheat oven to 300 degrees. Line mini-muffin tin with papers.

Step 4Combine flour, cinnamon and ginger in a bowl.

Step 5Beat butter and brown sugar until fluffy.

Step 6Add eggs one at a time. Mix well.

Step 7Add marmalade and almond extract. Mix well.

Step 8Add flour, beat slowly until well combined.

Step 9Drain fruit and fold into batter.

Step 10Fold in nuts.

Step 11Fill muffins with 2 tablespoons of batter.

Step 12Bake 15 minutes. Reduce temperature to 275 degrees and rotate pan.

Step 13Bake 15-20 minutes until brown and toothpick comes out clean.

Step 14Cool in pan.
