fresh strawberry muffins

I had leftover strawberries that I wanted to use and I was on a muffin kick. I found this on http://nancysrecipes.wordpress.com I have added a little more cinnamon than the orginal recipe called for. My famaily loves these any time we have leftover strawberries.

Ingredients

  • 1/2 cup butter, softened
  • 3/4 cup sugar
  • 1 - egg
  • 2 cups flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk
  • 1/2 teaspoon vanilla extract
  • 1 1/2 cups fresh chopped strawberries
  • 3 teaspoons sugar
  • 1 teaspoon cinnamon

How To Make fresh strawberry muffins

  • Step 1
    Cream butter and sugar. Add egg and mix well.
  • Step 2
    Sift flour, baking powder, and salt in a small bowl. Add flour mixture and milk alternately to butter mixture. Add vanilla. Gently stir in strawberries.
  • Step 3
    Spoon batter into muffin pans.
  • Step 4
    Combine sugar and cinnamon and sprinkle over muffins.
  • Step 5
    Bake at 400º for 20-25 minutes.
