I had leftover strawberries that I wanted to use and I was on a muffin kick. I found this on http://nancysrecipes.wordpress.com I have added a little more cinnamon than the orginal recipe called for. My famaily loves these any time we have leftover strawberries.

Ingredients For fresh strawberry muffins

1/2 cbutter, softened

3/4 csugar
-
1egg
-
2 cflour
-
2 tspbaking powder

1/2 tspsalt

1/2 cmilk
-
1/2 tspvanilla extract

1 1/2 cfresh chopped strawberries

3 tspsugar

1 tspcinnamon
How To Make fresh strawberry muffins

1Cream butter and sugar. Add egg and mix well.

2Sift flour, baking powder, and salt in a small bowl. Add flour mixture and milk alternately to butter mixture. Add vanilla. Gently stir in strawberries.

3Spoon batter into muffin pans.

4Combine sugar and cinnamon and sprinkle over muffins.

5Bake at 400º for 20-25 minutes.
