I had leftover strawberries that I wanted to use and I was on a muffin kick. I found this on nancysrecipes.wordpress.com

I have added a little more cinnamon than the orginal recipe called for. My famaily loves these any time we have leftover strawberries.

Ingredients

  • 1/2 c
    butter, softened
  • 3/4 c
    sugar
  • 1
    egg
  • 2 c
    flour
  • 2 tsp
    baking powder
  • 1/2 tsp
    salt
  • 1/2 c
    milk
  • 1/2 tsp
    vanilla extract
  • 1 1/2 c
    fresh chopped strawberries
  • 3 tsp
    sugar
  • 1 tsp
    cinnamon

How to Make Fresh Strawberry Muffins

Step-by-Step

  1. Cream butter and sugar. Add egg and mix well.
  2. Sift flour, baking powder, and salt in a small bowl. Add flour mixture and milk alternately to butter mixture. Add vanilla. Gently stir in strawberries.
  3. Spoon batter into muffin pans.
  4. Combine sugar and cinnamon and sprinkle over muffins.
  5. Bake at 400ยบ for 20-25 minutes.
