- 1 package corn muffin mix, i used jiffy
- 1 can cream-style corn
- 1/3 cup fat-free milk
- 1 large egg
- 2 - scallions, sliced.
- 1/8 teaspoon salt and pepper each.

Step 1Heat oven to 425. Coat 6 lg muffin cups w/ cooking spray. In lg bowl, combine all ingredients. Mix well and until moistened. Divide batter evenly among muffin cups. Bake 15 min, or until a toothpick inserted in center comes out clean.
