Ingredients For easy scallion corn muffins

  • 1 pkg
    corn muffin mix, i used jiffy
  • 1 can
    cream-style corn
  • 1/3 c
    fat-free milk
  • 1 lg
    egg
  • 2
    scallions, sliced.
  • 1/8 tsp
    salt and pepper each.

How To Make easy scallion corn muffins

  • 1
    Heat oven to 425. Coat 6 lg muffin cups w/ cooking spray. In lg bowl, combine all ingredients. Mix well and until moistened. Divide batter evenly among muffin cups. Bake 15 min, or until a toothpick inserted in center comes out clean.
