easy blueberry muffins

I got this recipe from my mom about 15 years ago and have been making it ever since. Why?? minimum of ingredients, yummy, and of course -- fast and easy! Great for when you have friends over for coffee.

Ingredients

  • 2 cups bisquit mix
  • 1/3 cup sugar
  • 1/2 teaspoon cinnamon
  • 1 cup sour cream
  • 1 - egg beaten
  • 1 cup fresh or frozen, drained blueberries
  • - sugar for tops

How To Make easy blueberry muffins

  • Step 1
    Preheat oven to 425. Use vegetable spray to keep muffins from sticking (don't use paper cups as they stick to these) Combine dry ingredients. Make a well and add sour cream and egg. Stir til combined (batter will be stiff). Fold in blueberrie. Scoop 1/4 c. into muffin tins and sprinkle tops with sugar. Bake 20 minues til brown.
