doughnut wannabe muffins
These muffins taste like cake doughnuts! So easy to make too! This is an egg free recipe, I use banana as the binder but if you prefer you can substitute in 1 egg instead. Be prepared for cinnamon-y goodness!

Ingredients
- 1 3/4 cups all purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 teaspoon nutmeg
- 1 teaspoon cinnamon
- 1/2 cup sugar
- 1 - banana, mashed
- 1/3 cup oil
- 3/4 cup milk, 2% or almond
- 1 1/2 teaspoons vanilla extract
- 1/4 cup sugar
- 1 tablespoon cinnamon

Step 1Preheat oven to 350 degrees. Grease a 12 count muffin pan well. Mix the last 2 ingredients 1/4 c sugar and 1T cinnamon together in a small dish, set aside)

Step 2Mix dry ingredients together in a large bowl (except for the 1/4 c sugar and 1T cinnamon already mixed together and set aside)

Step 3In a separate bowl mix the wet ingredients together just until blended. Add wet ingredients to the dry ingredients and mix just until blended, do not over mix.

Step 4Scoop batter into prepared muffin pan.Fill each approx 2/3 full. Sprinkle with cinnamon sugar mix, about 1 tsp for each muffin. Bake for 15-20 minutes. Muffins will be done when they turn golden brown around the edges.
