doughnut wannabe muffins

These muffins taste like cake doughnuts! So easy to make too! This is an egg free recipe, I use banana as the binder but if you prefer you can substitute in 1 egg instead. Be prepared for cinnamon-y goodness!

Ingredients For doughnut wannabe muffins

  • 1 3/4 c
    all purpose flour
  • 1 1/2 tsp
    baking powder
  • 1/2 tsp
    salt
  • 1 tsp
    nutmeg
  • 1 tsp
    cinnamon
  • 1/2 c
    sugar
  • 1
    banana, mashed
  • 1/3 c
    oil
  • 3/4 c
    milk, 2% or almond
  • 1 1/2 tsp
    vanilla extract
  • 1/4 c
    sugar
  • 1 Tbsp
    cinnamon

    Preheat oven to 350 degrees. Grease a 12 count muffin pan well. Mix the last 2 ingredients 1/4 c sugar and 1T cinnamon together in a small dish, set aside)

    Mix dry ingredients together in a large bowl (except for the 1/4 c sugar and 1T cinnamon already mixed together and set aside)

    In a separate bowl mix the wet ingredients together just until blended. Add wet ingredients to the dry ingredients and mix just until blended, do not over mix.

    Scoop batter into prepared muffin pan.Fill each approx 2/3 full. Sprinkle with cinnamon sugar mix, about 1 tsp for each muffin. Bake for 15-20 minutes. Muffins will be done when they turn golden brown around the edges.
