deliciously plain ol' fashioned muffins

My mom made these for us for a treat, usually on a Saturday or a Sunday morning. I loved them; and they're not like todays muffins that are really cake. These are absolutely delishous and very good with eggs and bacon or just with a cup of cocoa. I make them for my kids now...and when I am a stay at home mom, I make them in the mornings before they go to school or work. We all love 'em!

Ingredients
- 1 - egg
- 1/2 cup milk
- 1/4 cup shortening (i use butterflavored crisco)
- 1 1/2 cups all purpose flour
- 1/2 cup granulated sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
How To Make deliciously plain ol' fashioned muffins

Step 1Heat oven to 400 degrees. Spray muffin cups (2 3/4" diameter) of muffin pan with butter flavored vegetable spray or grease with shortening, lightly, or of course you can use paper cups that go in the muffin tins.

Step 2Beat egg, stir in milk and oil. In a separate bowl, mix the dry ingredients, and make a well in the center.

Step 3Pour the wet ingredients into the dry ingredients, and stir well just until moistened. Batter should be lumpy.

Step 4Fill muffin cups 2/3 full. Bake for 20-25 minutes or until golden brown. Immediately remove from pan to wire rack. Serve hot or warm, with butter, preserves, jelly or honey.
