1Preheat oven to 375 degrees. Spray a muffin tin (large size muffins) with non-stick spray. Set aside.
2In a mixing bowl, whisk together the flour, sugar, baking powder, nutmeg, and salt. In another bowl, beat the egg with the milk, and then stir in vanilla. Add the egg mixture to the dry ingredients and stir with a fork until just combined. Stir in melted butter.
3Fill each cup 1/2 full and bake for 25 minutes, or until muffins are golden brown and firm to touch. Serve hot with butter & jam. ( my preference apple butter)
