These amazing little muffins come from a Tuscaloosa resturant! This recipe makes a TON but they do freeze well and the batter can stay in the fridge for a month.

Ingredients

  • 1 box 15oz box of raisin bran cereal
  • 3 cups sugar
  • 5 cups all purpose flour
  • 5 teaspoons baking soda
  • 2 teaspoons salt
  • 4 - eggs
  • 1 cup vegetable oil
  • 1 quart buttermilk
  • 2 teaspoons vanilla
  • 1 teaspoon ground cinnamon
  • 1 teaspoon groud cloves
  • 1 teaspoon ground nutmeg

How To Make cypress inn muffins

  • Step 1
    Preheat oven to 400 degrees. Mix dry ingredients in large bowl and then stir in remaining ingredients. Mix well. Fill MINI muffin tins 2/3 full and bake for 15 minutes.
  • Step 2
    The batter will last about a month in the refrigerator. I'm sure they could be made in large muffin tins, but I've never tried.
