These amazing little muffins come from a Tuscaloosa resturant! This recipe makes a TON but they do freeze well and the batter can stay in the fridge for a month.

Ingredients

  • 1 box
    15oz box of raisin bran cereal
  • 3 c
    sugar
  • 5 c
    all purpose flour
  • 5 tsp
    baking soda
  • 2 tsp
    salt
  • 4
    eggs
  • 1 c
    vegetable oil
  • 1 qt
    buttermilk
  • 2 tsp
    vanilla
  • 1 tsp
    ground cinnamon
  • 1 tsp
    groud cloves
  • 1 tsp
    ground nutmeg

How to Make Cypress Inn Muffins

Step-by-Step

  1. Preheat oven to 400 degrees. Mix dry ingredients in large bowl and then stir in remaining ingredients. Mix well. Fill MINI muffin tins 2/3 full and bake for 15 minutes.
  2. The batter will last about a month in the refrigerator.

    I'm sure they could be made in large muffin tins, but I've never tried.
