1For Batter: In large bowl combine flour, baking soda, cinnamon and coriander; set aside. In small bowl combine eggs, sugar, pumpkin, oil, and vanilla. Mix well. Add liquid ingredients to dry ingredients. Stir just until moistened.
2For Filling: Combine cream cheese, egg and sugar. Mix well.
3For Topping: Combine coconut, pecans, sugar and cinnamon.
4To Assemble: Sprinkle 1/2 of batter into 24 greased or paper lined muffin cups. Spoon cream cheese mixture evenly over partially filled cups. Spoon remaining batter over cream cheese, carefully spreading to edge. Sprinkle topping over top of each muffin.
5Bake at 350 degrees for 20-25 minutes. Cool in pan 3-4 minutes. Remove from pan.
