Ingredients
- 2 1/4 cups all purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/2 teaspoons ground cinnamon
- 1/2 teaspoon corriander
- 2 - eggs, lightly beaten
- 2 cups sugar
- 1 cup solid packed pumpkin
- 1/2 cup vegetable oil
- 1/2 teaspoon vanilla
- FILLING
- 6 ounces softened cream cheese
- 1 - egg
- 1 tablespoon sugar
- TOPPING
- 3/4 cup coconut
- 1/2 cup chopped pecans
- 1/4 cup sugar
- 1/2 teaspoon cinnamon
How To Make cream cheese pumpkin muffins

Step 1For Batter: In large bowl combine flour, baking soda, cinnamon and coriander; set aside. In small bowl combine eggs, sugar, pumpkin, oil, and vanilla. Mix well. Add liquid ingredients to dry ingredients. Stir just until moistened.

Step 2For Filling: Combine cream cheese, egg and sugar. Mix well.

Step 3For Topping: Combine coconut, pecans, sugar and cinnamon.

Step 4To Assemble: Sprinkle 1/2 of batter into 24 greased or paper lined muffin cups. Spoon cream cheese mixture evenly over partially filled cups. Spoon remaining batter over cream cheese, carefully spreading to edge. Sprinkle topping over top of each muffin.

Step 5Bake at 350 degrees for 20-25 minutes. Cool in pan 3-4 minutes. Remove from pan. Enjoy.
