Makes 1 dozen medium size muffins
Ingredients
- 1 cup tart cranberries
- 1/2 cup granulated sugar
- 2 cups all-purpose flour
- 4 teaspoons baking powder
- 3/4 teaspoon salt
- 1 large egg
- 1 cup milk
- 3 tablespoons butter, melted
- 1/2 teaspoon vanilla
- 1 teaspoon pure orange extract
How To Make cranberry muffins

Step 1Chop cranberries and sprinkle with 1/4 Cup of the sugar.

Step 2Sift remaining sugar with flour, baking powder and salt.

Step 3Beat egg slightly; add milk and butter.

Step 4Add wet ingredients to dry ingredients; stir only until moistened.

Step 5Fold in cranberries and extracts. Mix until smooth.

Step 6Transfer to greased muffin tins, filling 2/3 full. Bake at 425 degrees for 25 minutes. Cool.
