country style blueberry muffins

with different trials of various recipes...i finally came up with my own blueberry muffin recipe with a counry style taste...hope you enjoy...you can substitute chocolate chips or fresh raspberries if you like.

Ingredients

  • 2 1/2 cups all purpose flour
  • 2 teaspoons baking powder
  • 1\2 teaspoon baking soda
  • 1\4 teaspoon salt
  • 1 - egg
  • 3\4 -1 cups granulated sugar
  • 1 cup buttermilk
  • 1\2 cup vegetable oil or melted butter
  • 1 teaspoon vanilla
  • 1 cup fresh blueberries

How To Make country style blueberry muffins

  • Step 1
    Preheat oven to 350 degrees farenheit .in a large bowl add flour, baking powder, baking soda and salt..you can sift together or using a spoon mix to incorporate...set aside
  • Step 2
    In another bowl ,using a whisk.whisk egg with the sugar(if you dont want your muffins too sweet , use 34 cup of sugar and if you want it a little sweeter use the 1 cup...when i made these i used 34 cup)then add in buttermilk,vanilla and oil(or melted butter)
  • Step 3
    If you like you can add 1 tsp of lemon zest if you like.make a well in dry ingredients then pour in wet mixture.using a wooden spoon mix to combine , then add in blueberries..just till moistened. prepare muffin tin with paper liners(12) or you can just spray cooking spray..scoop batter evenly in cups...bake 25-35 min till they turn a little golden brown...my oven took 35 min to bake..keep your eye on them and enjoy!!
