cornbread muffins
I actually got this off the back of a bag of cornmeal, but my kids liked it so much I had to convert the measurements to make more than 8.

Makes 12 muffins
Ingredients
- 1/2 cup yellow cornmeal
- 1 1/2 cups all purpose flour
- 3/4 cup sugar
- 1 teaspoon salt
- 3 teaspoons baking powder
- 4 1/2 tablespoons vegetable oil
- 2 - eggs
- 3/4 cup milk
How To Make cornbread muffins

Step 1Preheat oven to 400°F.

Step 2In a medium bowl, thoroughly mix together cornmeal, flour and baking powder.

Step 3Blend oil, egg, and milk together and add the dry ingredients.

Step 4Stir until dry ingredients are just moistened.

Step 5Fill greased muffin pan 2/3 full and bake 20-30 minutes.
