I actually got this off the back of a bag of cornmeal, but my kids liked it so much I had to convert the measurements to make more than 8.

Ingredients

1/2 c
yellow cornmeal
1 1/2 c
all purpose flour
3/4 c
sugar
1 tsp
salt
3 tsp
baking powder
4 1/2 Tbsp
vegetable oil
2
eggs
3/4 c
milk

Step-By-Step

1Preheat oven to 400°F.
2In a medium bowl, thoroughly mix together cornmeal, flour and baking powder.
3Blend oil, egg, and milk together and add the dry ingredients.
4Stir until dry ingredients are just moistened.
5Fill greased muffin pan 2/3 full and bake 20-30 minutes.
