Ingredients
- 2 1/2 cups flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 pinch salt
- 2 tablespoons instant coffee
- 1 cup milk
- 2 teaspoons pure vanilla extract
- 1/2 cup butter (melted)
- 2 - eggs
- 1 cup sugar
- 2 tablespoons instant coffee
- 1 tablespoon water
- 5 ounces cream cheese
- 7 tablespoons superfine sugar
How To Make coffee muffins

Step 1Preheat the oven to 390 degrees f.

Step 2In a bowl, sift the flour, baking powder, baking soda, and salt

Step 3Dissolve the coffee in the milk and vanilla. Add the butter, eggs, and sugar. Mix well. Add to the flour and mix. Do not over beat.

Step 4Pour the butter into a muffin pan and fill about 3/4 full.

Step 5Bake for 25 minutes. Take out of the oven and let the muffins cool completely.

Step 6Dissolve the coffee in the water. Using an electric mixer or food processor, puree the dissolved coffee, cream cheese, and sugar until smooth.

Step 7Cover the cool muffins with the frosting and serve.
