Ingredients

  • 2 1/2 cups flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 pinch salt
  • 2 tablespoons instant coffee
  • 1 cup milk
  • 2 teaspoons pure vanilla extract
  • 1/2 cup butter (melted)
  • 2 - eggs
  • 1 cup sugar
  • 2 tablespoons instant coffee
  • 1 tablespoon water
  • 5 ounces cream cheese
  • 7 tablespoons superfine sugar

How To Make coffee muffins

  • Step 1
    Preheat the oven to 390 degrees f.
  • Step 2
    In a bowl, sift the flour, baking powder, baking soda, and salt
  • Step 3
    Dissolve the coffee in the milk and vanilla. Add the butter, eggs, and sugar. Mix well. Add to the flour and mix. Do not over beat.
  • Step 4
    Pour the butter into a muffin pan and fill about 3/4 full.
  • Step 5
    Bake for 25 minutes. Take out of the oven and let the muffins cool completely.
  • Step 6
    Dissolve the coffee in the water. Using an electric mixer or food processor, puree the dissolved coffee, cream cheese, and sugar until smooth.
  • Step 7
    Cover the cool muffins with the frosting and serve.
