Ingredients For coffee muffins

2 1/2 cflour

2 tspbaking powder

1 tspbaking soda

1 pinchsalt

2 Tbspinstant coffee

1 cmilk
-
2 tsppure vanilla extract

1/2 cbutter (melted)

2eggs

1 csugar

2 Tbspinstant coffee

1 Tbspwater

5 ozcream cheese

7 Tbspsuperfine sugar
How To Make coffee muffins

1Preheat the oven to 390 degrees f.

2In a bowl, sift the flour, baking powder, baking soda, and salt

3Dissolve the coffee in the milk and vanilla. Add the butter, eggs, and sugar. Mix well. Add to the flour and mix. Do not over beat.

4Pour the butter into a muffin pan and fill about 3/4 full.

5Bake for 25 minutes. Take out of the oven and let the muffins cool completely.

6Dissolve the coffee in the water. Using an electric mixer or food processor, puree the dissolved coffee, cream cheese, and sugar until smooth.

7Cover the cool muffins with the frosting and serve.
