I love using instant coffee in baked goods, and these muffins are delicious with the praline-style topping.

Ingredients

  • 1 3/4 cups all-purpose flour
  • 1/3 cup light brown sugar
  • 3 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup chopped pecans
  • 1 large egg
  • 3/4 cup milk
  • 2 tablespoons instant coffee
  • 1 teaspoon vanilla extract
  • 1/2 cup unsalted butter, melted
  • 1 tablespoon granulated sugar
  • 2 tablespoons chopped pecans

How To Make coffee muffins with sugared-pecan topping

  • Step 1
    Preheat the oven to 375 degrees F. Combine flour, brown sugar, baking powder, salt, and pecans in a large mixing bowl.
  • Step 2
    In a separate bowl, combine the egg, milk, instant coffee, and vanilla. Whisk well to dissolve the coffee.
  • Step 3
    To the dry mixture, add the egg mixture and melted butter. Stir just until moistened - don't over mix.
  • Step 4
    Spray a muffin tin and drop the batter in with a scoop. Sprinkle the 1 Tbsp sugar and 2 Tbsp chopped pecans over the top of each muffin.
  • Step 5
    Bake muffins at 375 degrees for 18-20 minutes. Allow to cool several minutes and move muffins to a cooling rack.
