I love using instant coffee in baked goods, and these muffins are delicious with the praline-style topping.

Ingredients
- 1 3/4 cups all-purpose flour
- 1/3 cup light brown sugar
- 3 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 cup chopped pecans
- 1 large egg
- 3/4 cup milk
- 2 tablespoons instant coffee
- 1 teaspoon vanilla extract
- 1/2 cup unsalted butter, melted
- 1 tablespoon granulated sugar
- 2 tablespoons chopped pecans
How To Make coffee muffins with sugared-pecan topping

Step 1Preheat the oven to 375 degrees F. Combine flour, brown sugar, baking powder, salt, and pecans in a large mixing bowl.

Step 2In a separate bowl, combine the egg, milk, instant coffee, and vanilla. Whisk well to dissolve the coffee.

Step 3To the dry mixture, add the egg mixture and melted butter. Stir just until moistened - don't over mix.

Step 4Spray a muffin tin and drop the batter in with a scoop. Sprinkle the 1 Tbsp sugar and 2 Tbsp chopped pecans over the top of each muffin.

Step 5Bake muffins at 375 degrees for 18-20 minutes. Allow to cool several minutes and move muffins to a cooling rack.
