coffee and cream muffins
my love of coffee goes way back so i am always trying new recipes. these have such a nice texture with or without chocolate chips

Ingredients
- 2 tablespoons instant coffee
- 2 tablespoons hot water
- 2 cups all purpose flour
- 1 tablespoon baking powder
- 1/8 teaspoon salt
- 1/2 cup brown sugar
- 2 - eggs
- 1 cup 1/2 &1/2
- 6 tablespoons oil or melted butter
- 1/2 cup mini choc chips if desired
How To Make coffee and cream muffins

Step 1dissolve the coffee in the hot water. sift all the dry ingredients. mix the oil, eggs, 1/2 1/2. add the coffee mixture. mix lightly the dry and wet together. fold in the chips if using. bake at 400 for 20 minutes. i put some strusel with heath chips in it on top of some of them. either way they are good. i think i like them better than my capp muffins.
