Makes 12 Muffins
Ingredients
- 1 1/2 cups candied clemetine puree
- 1/2 cup vegetable oil
- 1 1/4 cups almond milk
- 1/4 cup sugar
- 2 cups flour
- 1 1/2 teaspoons baking powder
- 2 teaspoons baking soda
- CANDIED CLEMENTINES
- 12 - clementines, washed
- 4 cups sugar
- 3 cups water
How To Make clementine muffins

Step 1Candied Clementines: Wash the clementines well. Do not peel. Pierce 8-10 times with a toothpick. Add to a large, deep pot with water and sugar. Bring to a simmer, covered, simmer 1 1/2 hours. DO NOT BOIL! Let cool.

Step 2Preheat oven to 350 degrees.

Step 3Line muffin pan with papers.

Step 4Clementine Puree: Puree the clementines ( 8 made the 1 1/2 cups needed)in a food processor until fairly smooth.

Step 5Combine the clementine puree, oil almond milk and sugar. Whisk until smooth.

Step 6Mix flour, baking soda and baking powder in a bowl.

Step 7Fold the dry ingredients into the wet mixture until combined.

Step 8Pour into muffin pan.

Step 9Bake for 25-30. Let cool in pan 30 minutes.
