Makes 12 Muffins


  • 1 1/2 c
    candied clemetine puree
  • 1/2 c
    vegetable oil
  • 1 1/4 c
    almond milk
  • 1/4 c
  • 2 c
  • 1 1/2 tsp
    baking powder
  • 2 tsp
    baking soda

  • 12
    clementines, washed
  • 4 c
  • 3 c

How to Make Clementine Muffins


  1. Candied Clementines:
    Wash the clementines well. Do not peel. Pierce 8-10 times with a toothpick. Add to a large, deep pot with water and sugar.
    Bring to a simmer, covered, simmer 1 1/2 hours. DO NOT BOIL! Let cool.
  2. Preheat oven to 350 degrees.
  3. Line muffin pan with papers.
  4. Clementine Puree:
    Puree the clementines ( 8 made the 1 1/2 cups needed)in a food processor until fairly smooth.
  5. Combine the clementine puree, oil almond milk and sugar. Whisk until smooth.
  6. Mix flour, baking soda and baking powder in a bowl.
  7. Fold the dry ingredients into the wet mixture until combined.
  8. Pour into muffin pan.
  9. Bake for 25-30. Let cool in pan 30 minutes.
  10. Enjoy!
