This stuffed corn muffins recipe I created is a style of Clayton sandwich. This is very delicious. It's great serving for a potluck.

Ingredients
- 8 frozen all-white meat chicken nuggets, thawed
- 3/4 cup creamy French dressing
- 3 banana peppers, sliced
- 1 package corn muffin mix (8.5 ounce)
- 2 large eggs
- 3/4 cup milk
- 1 cup shredded monterey jack cheese
How To Make clayton corn muffins

Step 1Preheat oven to 400 degrees F.

Step 2Line the muffin tin with paper baking cups. Spray each cup with cooking spray.

Step 3In a small bowl, combine chicken nuggets, French dressing, and sliced banana peppers; mix well.

Step 4Stir together muffin mix, eggs, milk, and 1/2 cup shredded Monterey Jack cheese in a medium bowl until combined.

Step 5Fill muffin cups halfway with batter.

Step 6Add chicken nuggets mixture to each cup.Top with remaining batter.

Step 7Sprinkle with remaining shredded cheese on top each muffin.

Step 8Bake in the preheated oven until a toothpick inserted into the batter comes out clean; about 20 minutes.
