This stuffed corn muffins recipe I created is a style of Clayton sandwich. This is very delicious. It's great serving for a potluck.

Ingredients

  • 8 frozen all-white meat chicken nuggets, thawed
  • 3/4 cup creamy French dressing
  • 3 banana peppers, sliced
  • 1 package corn muffin mix (8.5 ounce)
  • 2 large eggs
  • 3/4 cup milk
  • 1 cup shredded monterey jack cheese

How To Make clayton corn muffins

  • Step 1
    Preheat oven to 400 degrees F.
  • Step 2
    Line the muffin tin with paper baking cups. Spray each cup with cooking spray.
  • Step 3
    In a small bowl, combine chicken nuggets, French dressing, and sliced banana peppers; mix well.
  • Step 4
    Stir together muffin mix, eggs, milk, and 1/2 cup shredded Monterey Jack cheese in a medium bowl until combined.
  • Step 5
    Fill muffin cups halfway with batter.
  • Step 6
    Add chicken nuggets mixture to each cup.Top with remaining batter.
  • Step 7
    Sprinkle with remaining shredded cheese on top each muffin.
  • Step 8
    Bake in the preheated oven until a toothpick inserted into the batter comes out clean; about 20 minutes.
