Ingredients
- STREUSEL TOPPING
- 3 tablespoons flour
- 3 tablespoons packed brown sugar
- 2 tablespoons cold butter
- 1/4 teaspoon cinnamon
- MUFFINS
- 3 - apples, peeled and chopped
- 4 tablespoons packed brown sugar
- 1 1/2 tablespoons cinnamon
- 1/4 teaspoon nutmeg
- 2 1/2 cups flour
- 1/2 cup sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 1 stick butter, melted
- 1 large egg
- teaspoon vanilla extract
How To Make cinnamon-apple muffins

Step 1Preheat oven to 400. Line a standard size 12 cup muffin tin with paper liners.

Step 2For streusel: Combine 3 tablespoons flour, 3 tablespoons brown sugar, and 1/4 teaspoon of cinnamon. Cut in 2 tablespoons cold butter until it resembles a coarse crumb. Set aside.

Step 3For muffins: Combine apples, cinnamon, brown sugar and nutmeg. Set aside.

Step 4In a large bowl combine flour, sugar, baking powder and salt.

Step 5In a small bowl combine milk, egg, butter and vanilla.

Step 6With a wooden spoon add the wet ingredients to the dry ingredients just before they come together fold in apples DO NOT OVER MIX.

Step 7Divide batter evenly between each muffin cup and and top each with streusel. Bake for 20-25 minutes or until a toothpick inserted comes out clean. Cool completely on a wire rack.
