This is a recipe from one of my baking books that is delicious! Love apples and cinnamon together! The little chunks of apples make these muffins tasty with a really nice texture.

  • 1 1/2 c
  • 3/4 c
  • 1 1/2 tsp
    baking powder
  • 1 tsp
    ground cinnamon (i use a heaping teaspoon)
  • 1 c
    apple, finely chopped
  • 1/2 c
  • 1/3 c
    butter, melted
  • 1
  • 1/4 c
    chopped nuts, optional

How to Make Cinnamon Apple Muffins


  1. Preheat oven to 375. If not using paper cups, grease 12 muffin pan cups and set aside.
  2. Combine flour, sugar, baking powder and cinnamon in medium bowl. Add all remaining ingredients and stir until flour is moistened.
  3. Spoon batter evenly (I use an ice cream scoop to get consistency) into muffin pan cups/paper cups. Bake for 18 - 23 minutes or until lightly browned. Cool 5 minutes and remove from pan.
