Ingredients For churro muffins

  • MUFFIN
  • 2 c
    flour
  • 2 tsp
    cinnamon
  • 1/2 tsp
    baking powder
  • 1/2 tsp
    baking soda
  • 1/2 c
    butter, room temperature
  • 1/2 c
    brown sugar
  • 1/2 c
    granulated sugar
  • 2 lg
    eggs
  • 1/2 c
    sour cream
  • 1/4 c
    milk
  • 1 tsp
    vanilla
  • COATING
  • 6 Tbsp
    butter, melted
  • 1/2 c
    granulated sugar
  • 2 tsp
    cinnamon

How To Make churro muffins

  • 1
    Preheat oven to 425 degrees.

    Spray 12-count muffin pan with nonstick cooking spray.
  • 3
    Cream butter and sugars until soft and fluffy.
  • 4
    Add eggs and beat well.
  • 5
    Add the sour cream, milk and vanilla; beat until well combined.
  • 6
    Fold flour, baking powder, baking soda and cinnamon into wet ingredients.

    Divide batter into the muffin pan.

    Bake for 5 minutes at 425 degrees.

    Without opening the oven lower the temperature to 350 degrees and bake for an additional 15 minutes.

    Let cool in pan for 5 minutes.

    While muffins are cooling. Combine sugar and cinnamon for topping.

    Brush muffins with melted butter and then roll in cinnamon sugar.
