chocolate chip coffee muffins

Each bite of these muffins offers a hit of coffee flavor and chunks of chocolate. Just be sure to watch the muffins carefully as they will toughen if baked too long. They will freeze and reheat beautifully.

Ingredients

  • 2/3 cup 2% milk (fat free will work just as well)
  • 5 tablespoons butter, melted
  • 3 tablespoons instant coffee granules
  • 1 1/2 teaspoons vanilla extract
  • 1 large egg, lightly beaten
  • 9 ounces all-purpose flour or whole wheat pastry flour (about 2 cups)
  • 1/2 teaspoon ground cinnamon otr to taste
  • 2/3 cup sugar or splenda
  • 1/2 cup mini bittersweet chocolate chips ( you can use up to 1 cup if you want)
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • - cooking spray

How To Make chocolate chip coffee muffins

  • Step 1
    Preheat oven to 375°. Combine first 6 ingredients.
  • Step 2
    Lightly spoon flour into dry measuring cup level with a knife. Combine flour and next 4 ingredients (through salt) in a large bowl; stir well with a whisk. Make a well in center of flour mixture and add milk mixture to flour mixture, stir just until moist.
  • Step 3
    Spoon batter into 12 muffin cups coated with cooking spray. Bake for 15 minutes or until done. Remove muffins from pan immediately; place on a wire rack.
