1Preheat oven to 400 degrees.
In small bowl, stir lemon juice with milk (if you are lucky to have milk that recently has soured, use that instead).
In a large bowl, mix cereal with boiling water until cereal is saturated. Stir in milk mixture, oil and eggs and mix well. NOTE: You can use any other granola you wish but Trader Joe's Chocolate Granola was a real find for this recipe!
In another bowl, sift flour, baking powder, baking soda, salt, cinnamon & nutmeg. Add this gradually to cereal mixture and stir until incorporated.
In a small bowl, mash bananas with a fork until smooth. Fold into batter. Chop chocolate into small chunks and fold that into batter.
Fill muffin cups 3/4 full with batter (I like paper liners -- this is a sticky batter and they are easier to store and eat in the liners) for 10 to 12 minutes until tops spring back when touched.
