chocolate banana granola muffins

I am always looking for something to make with ripe bananas (I hate throwing them out) and gourmet chocolate and Voila!! a muffin that uses those ingredients and tastes good with my morning coffee! I've been making cereal muffins for years but I think this is the best variation I've created.

Ingredients

  • 1 tablespoon lemon juice
  • 1 cup milk
  • 1/2 cup boiling water
  • 1 1/2 cups trader joe's chocolate granola
  • 1/4 cup vegetable oil
  • 2 - eggs. beatem
  • 1 1/2 cups flour
  • 1/2 cup sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 2 - bananas
  • 2 ounces chocolate bar, chopped (i like dark unsweet)

How To Make chocolate banana granola muffins

  • Step 1
    Preheat oven to 400 degrees. In small bowl, stir lemon juice with milk (if you are lucky to have milk that recently has soured, use that instead). In a large bowl, mix cereal with boiling water until cereal is saturated. Stir in milk mixture, oil and eggs and mix well. NOTE: You can use any other granola you wish but Trader Joe's Chocolate Granola was a real find for this recipe! In another bowl, sift flour, baking powder, baking soda, salt, cinnamon & nutmeg. Add this gradually to cereal mixture and stir until incorporated. In a small bowl, mash bananas with a fork until smooth. Fold into batter. Chop chocolate into small chunks and fold that into batter. Fill muffin cups 3/4 full with batter (I like paper liners -- this is a sticky batter and they are easier to store and eat in the liners) for 10 to 12 minutes until tops spring back when touched.
