Ingredients
- 1 - ripe hass avocado
- 3/4 cup caster sugar or extra fine baker's sugar
- 1-1/4 cup low fat buttermilk
- 1 large egg, lightly beaten
- 1 teaspoon vanilla extract
- 1-3/4 cup all-purpose flour
- 1/4 cup unsweetened cocoa
- 2 teaspoons baking powder
- 1 teaspoon salt
- 1/2 teaspoon baking soda
- 1 cup shelled walnuts, chopped and divided
How To Make chocolate avocado walnut muffins

Step 1Preheat oven to 375°F./190°C.

Step 2Mash avocado with sugar in a mixing bowl (makes it easier to get the avocado smooth).

Step 3Add all remaining ingredients except reserving 1/4 cup of the chopped walnuts.

Step 4Place batter 2/3 full in cupcake paper lined muffin tin with at least 20 cavities.

Step 5Sprinkle better with the reserved walnuts.

Step 6Bake for 20-25 minutes or until a toothpick can be inserted and removed without wet batter.

Step 7Cool on a wire rack.
