Ingredients

  • 1 - ripe hass avocado
  • 3/4 cup caster sugar or extra fine baker's sugar
  • 1-1/4 cup low fat buttermilk
  • 1 large egg, lightly beaten
  • 1 teaspoon vanilla extract
  • 1-3/4 cup all-purpose flour
  • 1/4 cup unsweetened cocoa
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 cup shelled walnuts, chopped and divided

How To Make chocolate avocado walnut muffins

  • Step 1
    Preheat oven to 375°F./190°C.
  • Step 2
    Mash avocado with sugar in a mixing bowl (makes it easier to get the avocado smooth).
  • Step 3
    Add all remaining ingredients except reserving 1/4 cup of the chopped walnuts.
  • Step 4
    Place batter 2/3 full in cupcake paper lined muffin tin with at least 20 cavities.
  • Step 5
    Sprinkle better with the reserved walnuts.
  • Step 6
    Bake for 20-25 minutes or until a toothpick can be inserted and removed without wet batter.
  • Step 7
    Cool on a wire rack.
