  • 2/3 c
    hungry jack mashed potato flakes
  • 3/4 c
    boiling water
  • 3 Tbsp
    butter ,melted
  • 3/4 c
  • 1 large
    egg, slightly beaten
  • 1 c
    yellow corn meal
  • 1 tsp
    baking powder
  • 3/4 tsp
  • 1 tsp
    dill weed, thyme or rosemary
  • 1/4 tsp
    black pepper
  • 3/4 c
    shredded cheddar cheese, divided

How to Make Cheese and Herb Muffins


  1. Heat oven to 400* lightly coat 8 muffin tins with cooking spray
  2. Combine water, butter,milk and egg Ina large mixing bowl. Add potato flakes, cornmeal baking powder, salt, pepper and desired seasonings. Mix well, stir in half the cheese
  3. Divide mixture evenly in pan and top with cheese
  4. Bake 20 minutes cool 10 minutes before serving . ENJOY!
