This recipe comes from my Southern Living 1991 Annual cookbook. I like it because the flavors are a little more unusual; and delicious! Try them you'll like them!

  • 2 c
    all-purpose flour
  • 3 1/2 tsp
    baking powder
  • 1/2 tsp
  • 1 tsp
  • 1/4 c
    butter or margarine (i use butter)
  • 1 c
    cheddar cheese, shredded
  • 2/3 c
  • 1
    egg, beaten
  • 1 c

How to Make Cheddar Raisin Muffins


  1. Combine first 4 ingredients in a large bowl; cut in butter with a pastry blender until mixture resembles coarse meal. Stir in cheese and raisins. Make a well in center of mixture.
  2. Combine egg and milk; add to dry ingredients, stirring just until moistened. Spoon batter into greased and floured muffin pans. Bake at 425F for 20-25 minutes. Remove from pans. Yeild: 14 muffins.
