cheddar corn muffins
I didn't have any cornmeal to make cornbread and did not want to venture out to the store so this is what I came up with to serve with my Crockpot Pumpkin Turkey Chili. They were hubby and son approved.

Ingredients
- 1 can whole kernel corn, drained (liquid reserved)
- 1/4 cup butter, melted
- 2 cups biscuit mix
- 1/3 cup dry milk powder
- 3 tablespoons sugar
- 1 cup cheddar cheese, shredded
- 1 - egg, beaten
How To Make cheddar corn muffins

Step 1Drain corn reserving liquid. Add to melted butter to measure 2/3 cup liquid.

Step 2Combine biscuit mix, dry milk, and sugar.

Step 3Stir in corn and cheese. Add liquid ingredients and egg. Blend lightly.

Step 4Fill greased muffin cups 2/3 full. Bake 400* for 25 minutes.

Step 5Remove from pan immediately.
