These go well w/ just about any dish. Or eat them by themselves for a lite lunch.

Ingredients

  • 6 slices bacon
  • 1 cup flour
  • 1 cup whole wheat flour
  • 1-1/2 tablespoon sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1`-1/2 teaspoon garlic powder
  • 5 teaspoons dried chives
  • 1/3 cup parmesan cheese
  • 1 cup reduced-fat, shredded cheddar cheese
  • 1 - egg, beaten
  • 1/2 cup fat-free milk
  • 1/2 cup fat-free, condensed cream of mushroom soup
  • 1/2 cup canola oil

How To Make cheddar, chive muffins w/ bacon.

  • Step 1
    Heat oven to 400 Spray 12 muffin cups w/ cooking spray. Cook bacon in lg skillet over med-high heat until crisp. Drain, crumble, set aside.
  • Step 2
    In lg bowl, combine flours, sugar, baking powder, salt, garlic powder, chives, parmesan cheese, cheddar cheese and bacon crumbles.
  • Step 3
    In another bowl, stir together the egg, milk, soup and oil. Mix egg mix into dry ingredients until just moistened. Spoon batter evenly into muffin cups. Bake 20-25 min, or until a toothpick insreted in center comes out clean.
