cheddar-bacon muffins
Serve with sweet cream butter and breakfast items of your choice. We like these muffins with a frittata, omelets, or just a bowl of fruit. Great addition to a holiday brunch buffet table. Also, these go wonderfully with a bowl of soup or a crisp green salad. Use your own imagination.

Ingredients For cheddar-bacon muffins

½ cup yellow corn meal

1½ cups all-purpose flour

2 tsp. baking powder

¼ tsp. baking soda

½ tsp. salt

1 cup buttermilk
-
1 large egg
-
4 tbs. mayonnaise

½ cup cheddar cheese, freshly grated

½ cup cooked, crumbled bacon, divided

¼ tsp. garlic powder
-
1½ tsp. dried parsley flakes

2 tbsp. melted butter

1 tbsp. dried parsley flakes

¼ tsp. garlic powder
How To Make cheddar-bacon muffins

1Preheat oven to 400º F. Spray a 12 cup muffin pan with non-stick baking spray (I used Baker’s Joy)

2In a mixing bowl combine the flour, cornmeal, baking powder, baking soda, salt, buttermilk, egg and mayonnaise. Add the cheese, ½ the bacon, and ¼ tsp. garlic powder. Divide evenly in twelve well-greased muffin tins. Sprinkle tops with remaining ¼ cup crumbled bacon.

3Bake for 12 minutes or until toothpick inserted in centers of two muffins comes out clean and muffins are golden brown.

4Remove from oven and brush tops with ¼ tsp. garlic powder, 1 Tbsp. dried parsley flakes and 2 Tbsp. melted butter.
