casey's blueberry muffins

Wonderful homemade muffins & so easy. When my granddaughter was 7 she would always help me make these because she loved eating them. We had so much fun! This is her recipe and she actually submitted it in her church cookbook. I love her so much!!!

Ingredients

  • 1 large egg
  • 1/2 cup milk
  • 1/4 cup oil
  • 1/4 teaspoon vanilla extract
  • 1 1/2 cups self-rising flour
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar
  • - dash of salt
  • 2 cups fresh blueberries (or frozen & thawed)

How To Make casey's blueberry muffins

  • Step 1
    Preheat oven to 400. Beat egg & stir in milk, oil & vanilla.
  • Step 2
    Mix dry ingredients then add to egg/milk mixture. Batter will be a bit lumpy. Carefully fold in blueberries.
  • Step 3
    Pour in greased muffin pan (or line with cupcake papers) 2/3 full.
  • Step 4
    Bake at 400 for 20-25 min.
