casey's blueberry muffins
Wonderful homemade muffins & so easy. When my granddaughter was 7 she would always help me make these because she loved eating them. We had so much fun! This is her recipe and she actually submitted it in her church cookbook. I love her so much!!!

Ingredients
- 1 large egg
- 1/2 cup milk
- 1/4 cup oil
- 1/4 teaspoon vanilla extract
- 1 1/2 cups self-rising flour
- 3/4 cup granulated sugar
- 1/4 cup brown sugar
- - dash of salt
- 2 cups fresh blueberries (or frozen & thawed)
How To Make casey's blueberry muffins

Step 1Preheat oven to 400. Beat egg & stir in milk, oil & vanilla.

Step 2Mix dry ingredients then add to egg/milk mixture. Batter will be a bit lumpy. Carefully fold in blueberries.

Step 3Pour in greased muffin pan (or line with cupcake papers) 2/3 full.

Step 4Bake at 400 for 20-25 min.
