Wonderful homemade muffins & so easy. When my granddaughter was 7 she would always help me make these because she loved eating them. We had so much fun! This is her recipe and she actually submitted it in her church cookbook. I love her so much!!!

Ingredients

  • 1 large
    egg
  • 1/2 c
    milk
  • 1/4 c
    oil
  • 1/4 tsp
    vanilla extract
  • 1 1/2 c
    self-rising flour
  • 3/4 c
    granulated sugar
  • 1/4 c
    brown sugar
  • ·
    dash of salt
  • 2 c
    fresh blueberries (or frozen & thawed)

How to Make Casey's Blueberry Muffins

Step-by-Step

  1. Preheat oven to 400. Beat egg & stir in milk, oil & vanilla.
  2. Mix dry ingredients then add to egg/milk mixture. Batter will be a bit lumpy. Carefully fold in blueberries.
  3. Pour in greased muffin pan (or line with cupcake papers) 2/3 full.
  4. Bake at 400 for 20-25 min.
