Ingredients
- 1 1/3 cups all purpose flour
- 1 cup oats (quick cooking is ok but old fashioned gives you more texture)
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 cup brown sugar
- 3/4 cup carrots, finely shredded
- 1/2 cup raisins
- 1/2 cup milk
- 1 - egg, beaten
- 1/3 cup butter, melted
- 1 teaspoon vanilla extract
How To Make carrot oatmeal muffins

Step 1Spray a 12 cup muffin tin with cooking spray. Preheat oven 375 degrees.

Step 2Combine flour and oats in large bowl.

Step 3Sprinkle with baking powder, baking soda and cinnamon. Mix.

Step 4Stir in brown sugar.

Step 5Add carrots and raisins, mix.

Step 6In seperate bowl milk, egg, butter and vanilla. Stir.

Step 7Add milk mixture to flour mixture and mix thoroughly.

Step 8Fill each muffin cup 3/4 of the way full.

Step 9Bake at 375 degrees for 20 - 25 minutes. Cool 10 minutes then remove from muffin tin.
