My mom and sisters and I are all coffee lovers, and these muffins are AWESOME with a good cup of coffee any time of day! Coffee, chocolate, and cinnamon...what a great flavor combo!!!

Ingredients

  • FOR 12 MUFFINS:
  • 2 cups all purpose flour
  • 1/2 cup sugar
  • 1/4 cup brown sugar
  • 2 teaspoons baking powder
  • 2 teaspoons instant coffee powder
  • 1/4 teaspoon salt
  • 1 teaspoon cinnamon, ground
  • 1 cup milk
  • 1/2 cup butter, melted
  • 1 - egg
  • 1 teaspoon vanilla extract
  • 3/4 cup semi-sweet mini chocloate chips or
  • 4 ounces semisweet chocolate, chopped into 1/2 inch pieces
  • CRUMB TOPPING:
  • 1/4 cup butter
  • 6 tablespoons all-purpose flour
  • 4 tablespoons brown sugar
  • 1/2 teaspoon cinnamon

How To Make cappuccino crumb muffins

  • Step 1
    Preheat oven to 400 F
  • Step 2
    In a large bowl, combine flour, sugar, brown sugar, baking powder, coffee powder, salt and cinnamon
  • Step 3
    In another bowl, mix together milk, melted butter, egg and vanilla
  • Step 4
    Pour liquid ingredients into the dry mixture. Stir to combine but do not overmix. Use a maximum of 15 - 20 strokes, and don't worry about lumps in the batter. Stir in the chocolate chips or chopped chocolate.
  • Step 5
    Spoon batter into 12 paper lined muffin cups
  • Step 6
    Use a pastry cutter and combine the crumb topping ingredients in a small bowl
  • Step 7
    Sprinkle topping evenly over the unbaked muffins
  • Step 8
    Bake for 20 minutes or until a toothpick inserted in the center comes out clean
  • Step 9
    These muffins are best served hot (warm at least!) I can't tell you if they keep well, they never last that long! A pot of fresh-brewed coffee + a bowl of fresh strawberries + these muffins = breakfast at my mom's house!!
