this corn muffin has the texture of white cake but tastes like cornbread. my daughter and i had these years ago at a resturant. finally kept trying to replicate and after many tries finally made it

Ingredients

  • 3/4 cup cake flour
  • 1/2 cup corn flour not corn meal
  • 1/4-1/2 cup sugar
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup milk
  • 3/4 cup oil
  • 1 large egg

How To Make can't believe this is cornbread

  • Step 1
    mix the wet ingredients well. add the other ingredients, leaving the corn flour to last. put into muffin tin. bake at 375 app 15 min. i used a higher oven the other day and it worked out fine. just took less time. these stay softer and will last longer than the regualar cornbread muffins. the amount of sugar depends on your prefrence for sweet corn bread. i like mine to be just lightly sweet.
