Ingredients For cajun honey corn muffins with currants

  • 1 cup yellow cornmeal
  • 1 cup milk
  • 1/4 cup sour cream
  • 1 egg
  • 1/4 cup honey
  • 1/3
    cup butter, melted
  • 1/3
    cup sugar
  • 1 1/4 cups flour
  • 1 t. baking powder
  • 1 cup dried currants

How To Make cajun honey corn muffins with currants

  • 1
    Beat together first 7 ingredients until blended. Stir together next 3 ingredient sand add, all at once, stirring until blended. Do not overmix. Divide batter between 12 paper lined muffin cups and bake at 400 for 22 minute or until a cake tester, inserted in center comes out clean. Allow to cool for 10 minutes, then remove form pan and continue cooling on a rack. make 12 muffins. Source: Renny Darling
