Ingredients
- 1 1/3 cups flour
- 3/4 cup sugar
- 1 teaspoon baking powder
- 3/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup (8oz) lemon or vanilla yogart
- 1 large egg
- 1/3 cup butter or margarine,melted
- 1-2 tablespoon lemon juice
- 1/2 cup coconut
- TOPPING:
- 1/3 cup lemon juice
- 1/4 cup sugar
- 1/4 cup flaked coconut..toasted
How To Make burst of lemon muffins

Step 1In a large bowl,combine,1st 5 ingredients. In another bowl,beat next 5 ingredients until smooth. Stir into dry ingredients,just until moistened. Fold in coconut.

Step 2Fill greased cups 2/3 full. Bake 18-20 minutes or until golden brown and muffins test done. Cool 5 minutes--remove to wire rack

Step 3TOPPING: In a saucepan combine lemon juice & sugar. Cook & stir until sugar is dissolved. Stir in coconut. Using a toothpick,poke 6-8 holes in each muffin. Spoon Coconut mixture over muffins. Serve warm or cool to room temperature.
