when my kids were little they were soooooooooooo picky. so i had to trick them into eating a breakfast that didnt come out a box with nothing but sugar.yes it has a wee sugar but only whats in the krusteaz and syrup u dont add any. its a great breakfast for the fall n winter when its cold out (or any time u dont mind the heat in the kitchen lol)the kids thought i was the coolest given them cupcakes for breakfast and they loved that they got to pour the syrup on.u aint gotta use name brands its just what i use and u can prepare night before keep refrigerated &covered if u do until ready to use

  • 1 Tbsp
    apple cider vinegar
  • 4 Tbsp
    mrs butterworths
  • 2 tsp
    maple extract
  • 1 pkg
    hickory smoked low fat bacon
  • 4 c
    krusteaz pancake mix
  • 3 large
  • 1 c
  • 3/4 stick
    blue bonnet butter
  • 1 pkg
    jimmy dean ground breakfast sausage flavor of ur choice
  • ·
    syrup flavor of ur choice

How to Make breakfast cupcakes


  1. pre heat the oven to 350 i mean i dont know ur oven ya know........ mine goes to 325 but mine runs high its old
  2. in a very large mixing bowl, melt butter slightly to almost liquid not quite. NOTE! u can not use butter flavored crisco it is to much grease
  3. add extract, Mrs. Buttersworth, and apple cider vinegar, to the slightly melted butter. mix with a spoon or a fork.
  4. add 2 well beaten, not foamy, eggs into the buttery mix, and stir. NOTE! do not over mix bubbles are not ur friend in the recipe lol.

    slowly add milk and mix well
  5. with a wooden spoon slowly mix in 1 cup of krusteaz to ur buttery milk at a time until all four cups are mixed in should look like regular pancake mix as far as consistency , not to thick but pourable, set aside if it seams to thick add a wee more milk or water till it looks right
  6. need to cut up the entire package of RAW hickory smoked bacon, and sausage into pieces approximately the size of ur pinky nail and mix them in the buttery milk mix.
    ( i like to use turkey sausage & bacon my self but whatever u so chose)
  7. spray your muffin pan with olive oil pam i mean spray all the inside and the out, yes even if u plan on using liners yes it has to be olive oil spray no it dont have to be pam.... do NOT flour ur pan fill each muffin hole 1/2 to 3/4 full................... should be enough to fill one tray u should get a dozen ............ i fill them all half way and then go back and add a lil more
  8. bake about 20 minutes ish depending on oven temp till a nice risen muffin is a beautiful golden brown........ take out of oven remove from pan soon as u can grab em with out burning ur self while still hot serve hot with honey or syrup or as my kids liked Hershey's strawberry or chocolate
