This is a very basic recipe that is quick and easy. Great for lazy weekend mornings!

Ingredients

  • 1 medium
    egg
  • 1/2 c
    milk
  • 1/4 c
    canola oil
  • 1 1/2 c
    all purpose flour
  • 1/2 c
    sugar
  • 2 tsp
    baking powder
  • 1/2 tsp
    salt
  • 1 c
    fresh or frozen blueberries

How to Make Blueberry Muffins

Step-by-Step

  1. Beat egg slightly and stir in milk and oil .
  2. Mix in next four ingredients until just moistened. Batter will be slightly lumpy.
  3. Stir in blueberries.
  4. Fill muffin cups 2/3 full. You may use a muffin pan sprayed lightly or paper liners. Don't forget to spray the liners so your muffins will not stick.
  5. Bake at 350 degrees for 15 to 20 minutes or until golden brown. Enjoy!
