blueberry muffins
I got this recipe from a friend, so I can't take the credit for it, but it's a very quick and easy recipe and very yummy with that morning cup of coffee. Try it and enjoy!

Ingredients
- 3/4 cup milk
- 1/4 cup lemon juice
- 2 cups all purpose flour
- 3/4 cup sugar
- 1 tablespoon baking powder
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1 - egg
- 1/4 cup vegetable oil
- 1 cup fresh or frozen blueberries
How To Make blueberry muffins

Step 1In a small bowl: mix milk and lemon juice, set aside

Step 2In a large bowl: combine flour, sugar, baking powder, cinnamon,and salt.

Step 3Add egg (lightly beaten) and oil to the milk mixture; mix well, then add this to the flour mixture just until moistened (it will be thick). Fold in blueberries. (Recipe calls for 1 cup, but I always add more.)

Step 4Fill greased or paper-lined muffin cups two thirds full. Bake at 400 degrees F at 25 minutes or until center bounces back when lightly touched.
