blueberry muffins

I got this recipe from a friend, so I can't take the credit for it, but it's a very quick and easy recipe and very yummy with that morning cup of coffee. Try it and enjoy!

Ingredients

  • 3/4 cup milk
  • 1/4 cup lemon juice
  • 2 cups all purpose flour
  • 3/4 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1 - egg
  • 1/4 cup vegetable oil
  • 1 cup fresh or frozen blueberries

How To Make blueberry muffins

  • Step 1
    In a small bowl: mix milk and lemon juice, set aside
  • Step 2
    In a large bowl: combine flour, sugar, baking powder, cinnamon,and salt.
  • Step 3
    Add egg (lightly beaten) and oil to the milk mixture; mix well, then add this to the flour mixture just until moistened (it will be thick). Fold in blueberries. (Recipe calls for 1 cup, but I always add more.)
  • Step 4
    Fill greased or paper-lined muffin cups two thirds full. Bake at 400 degrees F at 25 minutes or until center bounces back when lightly touched.
