I got this recipe from a friend, so I can't take the credit for it, but it's a very quick and easy recipe and very yummy with that morning cup of coffee. Try it and enjoy!

  • 3/4 c
  • 1/4 c
    lemon juice
  • 2 c
    all purpose flour
  • 3/4 c
  • 1 Tbsp
    baking powder
  • 1/2 tsp
    ground cinnamon
  • 1/2 tsp
  • 1
  • 1/4 c
    vegetable oil
  • 1 c
    fresh or frozen blueberries

How to Make Blueberry Muffins


  1. In a small bowl: mix milk and lemon juice, set aside
  2. In a large bowl: combine flour, sugar, baking powder, cinnamon,and salt.
  3. Add egg (lightly beaten) and oil to the milk mixture; mix well, then add this to the flour mixture just until moistened (it will be thick). Fold in blueberries. (Recipe calls for 1 cup, but I always add more.)
  4. Fill greased or paper-lined muffin cups two thirds full. Bake at 400 degrees F at 25 minutes or until center bounces back when lightly touched.
