blueberry muffins
Got this recipe from a cookbook that was put together as a fundraiser when my daughter was a cheerleader in high school(2003). I made them for the Crew my husband works with & everyone seemed to like them. (Including my 19 month old Grandson, lol.)

Ingredients
- 1/4 cup butter (softened)
- 1 cup sugar
- 1 - egg
- 3/4 cup milk
- 1/4 teaspoon vanilla
- 1 3/4 cups plus 1 tbs flour, divided
- 2 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup blueberries (fresh or frozen)
How To Make blueberry muffins

Step 1Pre heat oven to 425°.

Step 2Cream butter and sugar until well blended. Should be light & fluffy.

Step 3Beat in egg, milk and vanilla until nearly smooth.

Step 4In a small bowl, stir 1 3/4 c flour, baking powder and salt.

Step 5Add to Sugar & Milk mixture until all dry ingredients are moistened (will be a little lumpy)

Step 6Lightly toss blueberries with remaining flour & gently fold into batter.

Step 7Spoon ( I use an Ice Cream Scoop) into prepared muffin pans (I use bakers Joy).

Step 8Bake 25 minutes until Golden Brown.
