blueberry muffins

Friends from the Chicago area shared this recipe with me after trying for breakfast one cold December morning. I bake these quite often, one for the wonderful muffin, and two, to remember the good times we shared.

Ingredients

  • 2 cups sifted all purpose flour
  • 4 teaspoons baking powder
  • 3/4 cup sugar
  • 1 teaspoon salt
  • 1-1 1/2 cups blueberries
  • 2 - eggs
  • 1/2 cup melted butter
  • 1 cup milk
  • TOPPING
  • 1/4 teaspoon cinnamon
  • 1/2 cup sugar

How To Make blueberry muffins

  • Step 1
    In a small bowl, combine: sifted flour, baking powder, sugar & salt. Add blueberries, stirring gently until well coated
  • Step 2
    In another bowl, combine: eggs, melted butter and milk. Gently fold into dry mixture, just until moist. Careful not to over mix,
  • Step 3
    Fill greased muffin tins 2/3 full and sprinkle light with topping.
  • Step 4
    Bake at 400 degrees for 20 minutes, until lightly brown. Yields: 12-18 muffins.
