blueberry muffins

Started with a basic recipe from a cook book I received as a bride 41 yrs ago. I have adjusted and added to it over the years. Can substitute other fruits and use brown sugar instead if using apples and can add nuts.

Ingredients
- 1 - egg - beatened
- 1 cup milk
- 1/4 cup vegetable oil
- 1 teaspoon vanilla
- 1/2 cup sugar
- 1 1/2 cups self rising flour
- 1 cup blueberries
- - sugar in the raw
How To Make blueberry muffins

Step 1Preheat oven to 350. Spray 12 cup muffin pan with vegetable spray or use paper liners.

Step 2Combine egg, vegetable oil, vanilla and milk.

Step 3Stir in sugar and flour. Batter will be lumpy.

Step 4Gently fold in blueberries.

Step 5Divide among the 12 muffin cups. Sprinkle tops with Sugar in the Raw.

Step 6Bake 18- 28 minutes or until lightly browned.
