blueberry muffins

Started with a basic recipe from a cook book I received as a bride 41 yrs ago. I have adjusted and added to it over the years. Can substitute other fruits and use brown sugar instead if using apples and can add nuts.

Ingredients

  • 1 - egg - beatened
  • 1 cup milk
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla
  • 1/2 cup sugar
  • 1 1/2 cups self rising flour
  • 1 cup blueberries
  • - sugar in the raw

How To Make blueberry muffins

  • Step 1
    Preheat oven to 350. Spray 12 cup muffin pan with vegetable spray or use paper liners.
  • Step 2
    Combine egg, vegetable oil, vanilla and milk.
  • Step 3
    Stir in sugar and flour. Batter will be lumpy.
  • Step 4
    Gently fold in blueberries.
  • Step 5
    Divide among the 12 muffin cups. Sprinkle tops with Sugar in the Raw.
  • Step 6
    Bake 18- 28 minutes or until lightly browned.
