blueberry-cream cheese muffins
These are delicious blueberry muffins. During the holidays, I make this same recipe but substitute fresh or frozen cranberries for the blueberries. It's a family favorite! The recipe makes a large batch...32 muffins.... 1/2 the recipe for 16 muffins.. Enjoy!!!

Ingredients
- 1 cup butter, softened
- 1 x 8oz packages cream cheese, softened
- 1 1/2 cups sugar
- 1 1/2 teaspoons pure vanilla extract
- 4 - eggs
- 2 cups all purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 2 cups blueberries, fresh or frozen
- 1/2 cup chopped walnuts or pecans
How To Make blueberry-cream cheese muffins

Step 1In a large bowl, cream the butter and cream cheese..then add the sugar and vanilla and beat until blended

Step 2Add eggs, one at a time, beating well after each addition.

Step 3In a separate bowl, combine the flour, baking powder and salt. Then, add to the cream cheese/butter mixture with a spoon. Mix until just moistened.

Step 4Fold in your blueberries and nuts.

Step 5Fill paper-lined muffin cups three fourths full. Bake at 350 degrees for about 20-25 mins, until nicely browned. Cool and Enjoy!!!
