blueberry-cream cheese muffins

These are delicious blueberry muffins. During the holidays, I make this same recipe but substitute fresh or frozen cranberries for the blueberries. It's a family favorite! The recipe makes a large batch...32 muffins.... 1/2 the recipe for 16 muffins.. Enjoy!!!

Ingredients

  • 1 cup butter, softened
  • 1 x 8oz packages cream cheese, softened
  • 1 1/2 cups sugar
  • 1 1/2 teaspoons pure vanilla extract
  • 4 - eggs
  • 2 cups all purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 cups blueberries, fresh or frozen
  • 1/2 cup chopped walnuts or pecans

How To Make blueberry-cream cheese muffins

  • Step 1
    In a large bowl, cream the butter and cream cheese..then add the sugar and vanilla and beat until blended
  • Step 2
    Add eggs, one at a time, beating well after each addition.
  • Step 3
    In a separate bowl, combine the flour, baking powder and salt. Then, add to the cream cheese/butter mixture with a spoon. Mix until just moistened.
  • Step 4
    Fold in your blueberries and nuts.
  • Step 5
    Fill paper-lined muffin cups three fourths full. Bake at 350 degrees for about 20-25 mins, until nicely browned. Cool and Enjoy!!!
