~ awesome blueberry buttermilk muffins ~

I tweaked an old recipe I had to the point the recipe is no longer recognizable. I tried the original and mine are so much better. I made these for my blueberry boy, and he gave me two thumbs up. I hope you try them sometime. Enjoy! As always, my photos

Ingredients

  • TOPPING
  • 1/4 cup plus 1 tablespoon quick oats
  • 3 tablespoons brown sugar
  • 3/4 teaspoon cinammon
  • BATTER
  • 1/4 cup softened, butter
  • 1 cup sugar
  • 2 - eggs, lightly beaten
  • 1 teaspoon vanilla extract
  • 2 cups flour
  • 1/2 teaspoon baking powder
  • 1 teaspoon baking soda
  • 3/4 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1 1/3 cups buttermilk
  • 1 cup blueberries - toss in flour

How To Make ~ awesome blueberry buttermilk muffins ~

  • Step 1
    In a small bowl, mix oats, brown sugar and cinnamon. Set aside. Toss blueberries with flour. Preheat oven to 350 degree. Coat muffin tin with non stick cooking spray.
  • Step 2
    In a large bowl, beat butter and sugar together until fluffy. Beat in the eggs. Mix flour, soda, baking powder, salt and cinnamon together. Beat in flour mixture alternating with buttermilk and end with flour.
  • Step 3
    Carefully fold in the blueberries.
  • Step 4
    Spoon 2/3 batter to each muffin cup. Sprinkle oat topping evenly to each.
  • Step 5
    Bake for 15 - 20 minutes, or until pick comes out clean.
  • Step 6
    Remove from oven and cool for 5 minutes in the pan, then remove and finish cooking on rack. Enjoy these yummy muffins.
